LilyPond is a music typesetter. It produces beautiful sheet music using a high level description file as input. LilyPond is part of the GNU Project.

The lilypond website talks a lot about beauty and so on, and I would agree with a lot of what they say. However, I particularly like lilypond (apart from the beauty) because I find it functional. I can produce, combine and edit scores with ease and speed.
This package is ideal for those who dislike "point and click" or "drag and drop" modes of editing; input is ascii (text) and similar to latex (a means of mathematical typesetting). Granted, it takes a while to learn, but the effort is worth it.
